Imburrare e infarinare dei pirottini di alluminio e versarci il composto. Appena freddo il composto mettere i pirottini in freezer per alcune ore. Arriva la parte difficile: infornare a 210° per 15 minuti circa, non cuocere troppo altrimenti anche l'interno cuoce e addio crema! Io faccio così: passati 10 d'ora inizio con la prova stecchino (che dovrà uscire bagnato). Togliere dai pirottini e spolverare con zucchero a velo. Facoltativo: mezzo bicchierino di rhum. Una volta amalgamato il tutto, unire un uovo alla volta.&lt;br /&gt;Versare nel guscio di frolla e, delicatamente (è liquido), mettere in forno a 110° fino a che, scuotendo un pò la teglia, si intuisce che è cotta (deve diventare budinosa) - Unite il composto di cioccolato e burro che nel frattempo si sarà intiepidito.­&lt;br /&gt;Montate gli albumi e incorporateli all’impasto, delicatamente, mescolando dal basso verso l’alto.&lt;br /&gt;Versate metà composto in uno stampo da plumcake, conservando il resto in frigorifero, e cuocete a 180° per 20 minuti.&lt;br /&gt;Sfornate e lasciate raffreddare, premendo in modo da compattare il dolce. l'acqua tiepida. quando il lievito è sciolto aggiungere la farina e lo strutto a temperatura ambiente  (oppure stessa quantità di olio). mettere il panetto sul tavolo da lavoro e impastare 5 minuti a mano, poi lasciare lievitare - fino al raddoppio - al riparo da correnti d'aria e in un posto non freddo (il forno appena intiepidito va benissimo). Prendere un po' d'impasto e stenderlo con la macchina per fare la pasta in casa in strisce sottili (fino al 2) poi infarinare un lato, piegarlo in due e ripassarlo con la macchina. Procedere con tutta la pasta, un pezzo alla volta e tagliare le strisce in losanghe (circa 5cm x5 cm). nel frattempo scaldare il forno a 200°c.
